Joy Wellness Recipe - Mom's Healthy Secret Vegan Asian Fusion Recipes
Noodle soup has been one of the favourite cuisines in many asian countries. It's also very popular in many tropical asian cities. Why do people still choose eating this warm meal in a hot sunny day? Let's find out from this secret recipe of south asian fusion noodle soup!
1. Pan-fry cut tofu * 1 cup till they turn golden colour (Prox. 15 - 20 mins in medium heat) and pour the mixer of 4 tsp honey, 1/2 cup light soy sauce, 1 tsp rice vinegar, 1 tsp sesame oil on the top of them. Scoop the tofu up in a plate and wait to serve later.
2. Use the same pan, and pan-fry various vegetables of your choice (e.g.. mushrooms, bell peppers, hyacinth bean * 1 cup each) with shredded garlic*1, ginger * 5g, and chilli pepper* 3g (optional) separately and adding 1 tsp light soy sauce and 1 tsp honey. Pan-fry for 10-15 mins in medium to high heat. And scoop them all up and a plate and wait to serve later.
3. Add 400ml boiling water to the pan with all remained sauce and stir it for 5 mins, and add a vegetable stock and 3/4 can of coconut milk and well stir it till it turn brown. Add 2 packs (for 2 people) of udon noodle (or the noodle of your choice) into the boiling soup to cook for 5 mins.
4. Pour the noodle and the soup in a bowl and place the fried tofu and vegetables on the top of the noodle and seasoning with sesame seeds and squeeze 1/8 lemon in the soup. And it's ready to serve!
